Ingredients:
660g Rice syrup
660g Peanut butter
200g Raisins
200g Brown rice flour
90g Cocoa powder
2 small pinches of salt
Method:
Toast Rice Flour:
On a low flame, toast the brown rice flour while stirring until it becomes very slightly browned. 2. Mix Dry Ingredients:
In a bowl, mix the toasted rice flour with cocoa and salt. 3. Prepare Wet Mixture:
Pour rice syrup into a saucepan and bring it to a mild boil.
Add peanut butter and raisins, stirring for about half a minute or until well mixed.
Remove from the heat. 4. Combine Mixtures:
Pour the rice flour and cocoa mixture into the rice syrup mixture.
Mix well until completely combined. 5. Set the Mixture:
Spread the mixture out on a tray to a thickness of 1.5 cm.
Place the tray in the freezer for an hour. 6. Prepare to Serve:
After removing from the freezer, let it rest at room temperature for 15 minutes before cutting and serving.
