RECIPE: PEANUT BUTTER AND CHOCOLATE FUDGE

Ingredients:

660g Rice syrup

660g Peanut butter

200g Raisins

200g Brown rice flour

90g Cocoa powder

2 small pinches of salt


Method:

  1. Toast Rice Flour:

  • On a low flame, toast the brown rice flour while stirring until it becomes very slightly browned. 2. Mix Dry Ingredients:

  • In a bowl, mix the toasted rice flour with cocoa and salt. 3. Prepare Wet Mixture:

  • Pour rice syrup into a saucepan and bring it to a mild boil.

  • Add peanut butter and raisins, stirring for about half a minute or until well mixed.

  • Remove from the heat. 4. Combine Mixtures:

  • Pour the rice flour and cocoa mixture into the rice syrup mixture.

  • Mix well until completely combined. 5. Set the Mixture:

  • Spread the mixture out on a tray to a thickness of 1.5 cm.

  • Place the tray in the freezer for an hour. 6. Prepare to Serve:

  • After removing from the freezer, let it rest at room temperature for 15 minutes before cutting and serving.
