RECIPE: LEMON AND DATE SQUARES

Ingredients:

¾ cup coconut oil

½ cup rice syrup

2 cups spelt flour

3 cups rolled oat flakes

pinch of salt

Juice of 3 lemons

300g dates

¼ cup water


Method:

  1. Prepare the Dough:

  • Melt the coconut oil and mix in the rice syrup and a pinch of salt.

  • Add the flour and oats, and mix well to form a dough. 2. First Bake:

  • Divide the dough into thirds.

  • Roll out 2/3 of the dough flat on a baking sheet.

  • Bake in the oven at 180°C for 20 minutes. 3. Make the Date Paste:

  • While the base is baking, blend the dates, water, and juice from 3 lemons in a blender until smooth. 4. Assemble and Second Bake:

  • When the base comes out of the oven, spread the date paste on top.

  • Crumble the remaining 1/3 of the dough over the date paste.

  • Press down gently and bake for another 20 minutes or until the top is lightly browned. 5. Cool and Serve:

  • Let the bars cool down before cutting into pieces.

  • For quicker cooling, you can place them in the freezer.
