Ingredients:
6 onions
A dash of unrefined olive oil
Pinch of sea salt
2 tbsps. Rice vinegar
200g Cherry tomatoes
Method:
Sauté Onions:
Dice onions and sauté on low heat with a little olive oil.
Add a pinch of salt to the onions.
Stir occasionally and let them cook on low until they become golden brown and caramelized. 2. Add Cherry Tomatoes:
Add the cherry tomatoes to the onions.
Let the mixture simmer on very low heat until most of the liquid released by the tomatoes evaporates. 3. Blend:
Add the rice vinegar to the mixture.
Blend until very smooth.
