RECIPE: CRANBERRY AND RAISIN FLAPJACK

Ingredients:

2 cups of apple juice sweetened cranberries

2 cups raisins 

2 cups sunflower seeds

1 cup coconut oil

3 cups water

4 cups jumbo oats

Cinnamon to taste

1/3 cup brown rice syrup


Method:

  1. Blend Sunflower Seeds:

  • Blend the sunflower seeds until they are fine, almost like flour. 2. Add Dried Fruits:

  • Add the raisins and cranberries to the blender.

  • Blend until the dried fruits are chopped and mixed with the sunflower seeds. 3. Melt Wet Ingredients:

  • In a pot over the stove, melt the coconut oil with water and rice syrup. 4. Combine Mixtures:

  • Mix the sunflower seed, cranberry, and raisin mixture into the melted coconut oil, rice syrup, and water mixture.

  • Add cinnamon and jumbo oats. Mix well until fully combined. 5. Bake:

  • Spread the mixture evenly in a baking tray.

  • Bake at 180°C for 30-40 minutes, or until the top is golden brown.
