RECIPE: CASHEW CHEESE

Ingredients:

1 cup cashews soaked for 8-12 hours

Drain and rinse well

Blend with

2 tsp lemon juice,

2 tsp ume shiso seasoning or vinegar

fresh dill

1 tsp salt

2 spring onions

1-2 tsp olive oil


Method:

  1. Blend Ingredients:

  • Blend all the ingredients with 2-3 tablespoons of water until smooth.


  • 2. Drain and Ferment:

  • Transfer the blended mixture into a cheesecloth.

  • Hang the cheesecloth in a cool place overnight to allow excess water to drain out and for the cheese to ferment slightly, enhancing its flavor.
