RECIPE: CARROT MUFFINS


Ingredients:

2 cups raw carrots grated

1 cup water

1/2 cup unrefined sesame oil (or any unrefined oil you choose)

1/2 cup brown rice syrup

2 cups whole spelt flour

3 tbsp psyllium husk

1.5 tsps baking soda (good quality)

pinch of salt

Cinnamon, nutmeg, cloves, cardamon, vanilla - to taste

Optional: raisins, pecans, walnuts


Method:

Mix all ingredients together, then add the optional's if you wish.

Bake on 180 for 30 min.
