Eating whole grains, legumes and vegetables are what keep you full and satisfied for ages. By whole grains i mean THE WHOLE GRAIN, not the grain smashed into flour and mixed with other things.
Ingredients:
Black beans
Red rice
Avocado
Spring onion
Red peppercorn
Fresh parsley
Fresh coriander
Fresh celery
Kombu seaweed
Dressing:
2 heaped tbsps Tahini (pure ground sesame seeds)
1 Hot pepper
3 tbsps Water
½ a lime juiced
1 clove Garlic
Sea salt or tamari to taste
Method
Soak and Cook Beans:
Soak the black beans overnight.
Cook the beans with a post stamp-sized piece of Kombu until soft.
Drain and rinse the beans under cold water. 2. Cook Red Rice:
Cook 1 cup of red rice with 2 cups of water until all the water is absorbed. 3. Prepare Vegetables and Herbs:
Chop all the veggies and fresh herbs. 4. Make the Sauce:
Blend all the sauce ingredients together in a blender until smooth. 5. Combine Ingredients:
In a large bowl, mix the cooked beans, red rice, chopped veggies, and herbs.
Pour the sauce over the mixture and toss everything together until well combined. 6. Serve:
Transfer the mixed salad onto a nice plate.
