I have been attempting to make banana muffins for years and many recipes I have tried have come out very dense and heavy, i finally figured out this recipe which is so light and fluffy, the secret is psyllium husk, I love using it in baking, it is the best egg replacer ever, and it has many health befits!
Ingredients:
4 large bananas that are over ripe
2/3 cup water
1tsp vanilla or 1 vanilla pod
2/3 cup of coconut oil
10 dates
2 tbsp psyllium husk
2 cups of whole spelt flour
2tsp baking soda (good quality)
Cinnamon to taste
pinch of salt
optional: 1 cup sesame seeds/ walnuts/pecans
Method:
Blend Wet Ingredients:
In a blender, blend the bananas, water, vanilla, coconut oil, and dates until smooth. 2. Add Dry Ingredients:
Add the psyllium, flour, baking soda, salt, and cinnamon to the blender.
Blend until the mixture is smooth. 3. Incorporate Nuts or Seeds (optional):
Stir in the optional nuts or seeds. 4. Bake:
Pour the mixture into a baking dish.
Bake at 180°C for 30 minutes, or until a toothpick inserted into the center comes out dry.
