Ingredients:
¾ Cup Cooked Aduki Beans
1 ½ Cup Desiccated Coconut
3 Tbsp. Cashew Nut Butter
¼ Cup Raw Cocoa Powder
15 medjool dates
1 Pinch of Sea Salt
Raw Cocoa Powder for outer dusting
Put in the fridge or freezer to set for at least 30min but ideally an hour.
Once done take out and dust each ball in cocoa powder
Method:
Cook the Aduki Beans:
If cooking from scratch, place 1/2 cup of aduki beans in a deep pot or pressure cooker.
Add 3 cups of water and a small piece of Kombu seaweed.
Bring to a boil and cook until the beans are soft. 2. Drain and Process:
Once cooked, drain the beans and transfer them to a food processor.
Reserve the bean cooking liquid and drink it as a nourishing tea that strengthens kidneys, balances blood sugars, and detoxifies the body. 3. Add Ingredients:
Add the remaining ingredients to the food processor.
Blend until you achieve a thick paste, suitable for forming truffles. 4. Form Truffles:
With slightly wet hands, form the mixture into truffles approximately 1 inch in diameter.
Continue until all the batter is used up.
